Kumpir (Turkish stuffed baked potato)

A whole baked potato split open and stuffed with butter, cheese, sausage, sweetcorn, peas and olives. The Istanbul street-side classic.

Ingredients

  • 4 large baking potatoes (about 300 g each)
  • 100 g butter
  • 200 g grated mozzarella (or Turkish kaşar)
  • 100 g sucuk or sausage, sliced and fried
  • 100 g sweetcorn
  • 100 g peas (cooked)
  • 50 g black olives, sliced
  • 4 tbsp mayonnaise
  • 4 tbsp ketchup
  • 100 g pickled beetroot, diced (optional)

Method

  1. Heat oven to 200°C. Bake the potatoes for 1 hour-1 hour 15 minutes until tender.
  2. Cut each potato in half lengthways. Scoop out most of the flesh into a bowl, leaving a shell.
  3. Mash the flesh with most of the butter and a handful of cheese. Season.
  4. Pile the mash back into the potato shells. Top with the remaining cheese, sausage, sweetcorn, peas and olives.
  5. Return to the oven for 5 minutes until the cheese melts.
  6. Finish with a generous knob of butter, a swirl of mayo and ketchup, and the pickled beetroot if using.
  7. Eat with a fork, scooping the loaded filling.
