Steak Fajita

Sliced spiced beef with peppers and onion, in a soft tortilla with a little salsa.

Ingredients

  • 300 g sirloin steak, thinly sliced against the grain
  • 2 tsp fajita seasoning
  • 1 red pepper, sliced
  • 1/2 onion, sliced
  • 1 soft flour tortilla
  • 3 tbsp salsa
  • 1/2 lime
  • 1 tbsp vegetable oil
  • Salt and black pepper

Method

  1. Toss the steak with the fajita seasoning, salt and black pepper and leave for 10 minutes.

  2. Get a pan very hot with the oil. Char the pepper and onion for 4 minutes and set aside.

  3. Sear the steak in a single layer for 1 to 2 minutes a side. Leave it alone so it develops a crust, then toss with the vegetables for a minute.

  4. Slice the steak thinly if it is not already, across the grain.

  5. Warm the tortilla for 20 seconds so it is pliable.

  6. Fill with the beef and vegetables.

  7. Spoon over the salsa and squeeze over the lime.

Notes

Slice steak across the grain, not along it. It is the single change that makes cheap steak taste tender.
