Ingredients
- 3 ripe avocados
- 1 lime, juiced
- 1 small red onion, finely chopped
- 1 tomato, deseeded and diced
- 1 small red chilli, finely chopped (optional)
- Fresh coriander, chopped
- Salt
- To serve: tortilla chips
Method
- Smash. Halve avocados, remove stone (keep one aside). Scoop flesh into a bowl. Squeeze over lime juice. Smash with a fork to a chunky texture.
- Fold. Fold through onion, tomato, chilli (if using), most of the coriander. Salt to taste.
- Serve. Pile into a bowl. Top with remaining coriander. Drop the reserved pit in the centre.
- Eat. With tortilla chips. Within 30 minutes.
Tips
- Chunky, not smooth. It’s guacamole, not guacamousse.
- Stone-in seed keeps it from going brown. Leave the pit in the bowl.
- Eat immediately. Lime browning waits for no one.
