Guacamole with Tortilla Chips-style chunky avocado dip

Chunky avocado guacamole with tomato, red onion, and coriander, served with crispy tortilla chips. The 10-minute starter.

Ingredients

  • 3 ripe avocados
  • 1 lime, juiced
  • 1 small red onion, finely chopped
  • 1 tomato, deseeded and diced
  • 1 small red chilli, finely chopped (optional)
  • Fresh coriander, chopped
  • Salt
  • To serve: tortilla chips

Method

  1. Smash. Halve avocados, remove stone (keep one aside). Scoop flesh into a bowl. Squeeze over lime juice. Smash with a fork to a chunky texture.
  2. Fold. Fold through onion, tomato, chilli (if using), most of the coriander. Salt to taste.
  3. Serve. Pile into a bowl. Top with remaining coriander. Drop the reserved pit in the centre.
  4. Eat. With tortilla chips. Within 30 minutes.

Tips

  • Chunky, not smooth. It’s guacamole, not guacamousse.
  • Stone-in seed keeps it from going brown. Leave the pit in the bowl.
  • Eat immediately. Lime browning waits for no one.
