Turkish döner wrap (Mediterranean street food)

Thinly sliced döner meat wrapped in flatbread with salad and garlic yogurt sauce. Istanbul's late-night street food classic.

Ingredients

For the meat

  • 500 g lamb mince
  • 500 g beef mince
  • 1 onion, grated
  • 4 garlic cloves, crushed
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp ground paprika
  • 1 tsp salt
  • ½ tsp black pepper

To serve

  • 4 flatbreads (lavash or large flour tortillas)
  • 1 small cucumber, sliced
  • 2 tomatoes, sliced
  • Red onion, sliced
  • Lettuce, shredded
  • 4 tbsp garlic yogurt sauce (yogurt + crushed garlic + lemon)
  • Sumac and chilli flakes to sprinkle

Method

  1. Mix the meat with onion, garlic and spices. Knead 5 minutes until sticky.
  2. Press onto a skewer or roll into a loaf shape. Wrap tightly in cling film. Chill 4 hours (or freeze 1 hour).
  3. Roast at 220°C for 25 minutes until browned on the outside.
  4. Rest 10 minutes. Shave thin slices off the outside with a sharp knife.
  5. Warm the flatbreads.
  6. Spread with yogurt sauce. Pile the meat, salad and onion.
  7. Sprinkle with sumac and chilli. Roll tightly.
