Ingredients
For the lamb
- 600 g lamb shoulder, thinly sliced
- 2 tbsp olive oil
- Juice of 1 lemon
- 4 garlic cloves, crushed
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp ground paprika
- ½ tsp ground allspice
- ½ tsp ground cinnamon
- 1 tsp salt
To serve
- 4 pitta breads
- 3 tbsp tahini sauce (tahini + lemon + water + garlic)
- Pickled red cabbage
- Fresh parsley, chopped
- Sliced tomato and red onion
Method
- Mix the lamb with all the marinade ingredients. Cover, rest at least 2 hours.
- Heat a griddle pan until smoking. Sear the lamb strips in batches for 2 minutes per side.
- Warm the pittas.
- Spread each pitta with tahini sauce. Pile the lamb, pickled cabbage, parsley, tomato and onion.
- Roll tightly. Serve immediately.
