Ingredients

For the lamb

  • 600 g lamb shoulder, thinly sliced
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • 4 garlic cloves, crushed
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp ground paprika
  • ½ tsp ground allspice
  • ½ tsp ground cinnamon
  • 1 tsp salt

To serve

  • 4 pitta breads
  • 3 tbsp tahini sauce (tahini + lemon + water + garlic)
  • Pickled red cabbage
  • Fresh parsley, chopped
  • Sliced tomato and red onion

Method

  1. Mix the lamb with all the marinade ingredients. Cover, rest at least 2 hours.
  2. Heat a griddle pan until smoking. Sear the lamb strips in batches for 2 minutes per side.
  3. Warm the pittas.
  4. Spread each pitta with tahini sauce. Pile the lamb, pickled cabbage, parsley, tomato and onion.
  5. Roll tightly. Serve immediately.
