Sliced seasoned pork (or chicken) wrapped in warm pitta with tomato, red onion, chips and tzatziki. The Athens street food classic.

Ingredients

For the pork

  • 600 g pork shoulder, thinly sliced
  • 2 tbsp olive oil
  • 2 garlic cloves, crushed
  • 1 tbsp dried oregano
  • 1 tsp ground cumin
  • 1 tsp salt
  • Juice of 1 lemon

To serve

  • 4 pitta breads
  • Tzatziki (yogurt + cucumber + garlic + lemon)
  • Sliced tomato
  • Sliced red onion
  • Chips (optional)

Method

  1. Mix the pork with all the marinade ingredients. Rest 2 hours minimum.
  2. Heat a griddle pan until smoking. Sear the pork strips in batches for 2 minutes per side until charred.
  3. Warm the pittas.
  4. Spread each pitta with tzatziki.
  5. Layer with pork, tomato, red onion and a handful of chips.
  6. Roll tightly. Eat standing up — that’s how they do it in Athens.
