Ingredients
For the pork
- 600 g pork shoulder, thinly sliced
- 2 tbsp olive oil
- 2 garlic cloves, crushed
- 1 tbsp dried oregano
- 1 tsp ground cumin
- 1 tsp salt
- Juice of 1 lemon
To serve
- 4 pitta breads
- Tzatziki (yogurt + cucumber + garlic + lemon)
- Sliced tomato
- Sliced red onion
- Chips (optional)
Method
- Mix the pork with all the marinade ingredients. Rest 2 hours minimum.
- Heat a griddle pan until smoking. Sear the pork strips in batches for 2 minutes per side until charred.
- Warm the pittas.
- Spread each pitta with tzatziki.
- Layer with pork, tomato, red onion and a handful of chips.
- Roll tightly. Eat standing up — that’s how they do it in Athens.
