Ingredients
For the chicken
- 600 g chicken thighs, boneless, cut into strips
- 2 tbsp olive oil
- Juice of 1 lemon
- 4 garlic cloves, crushed
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp ground paprika
- ½ tsp ground turmeric
- ½ tsp ground cinnamon
- 1 tsp salt
To serve
- 4 pitta breads
- Garlic sauce (4 tbsp mayo + 2 crushed garlic + 1 tsp lemon)
- Pickled chillies, sliced cucumber, tomato
- Chips (optional)
Method
- Mix the chicken with all the marinade ingredients. Cover, rest at least 2 hours (overnight is better).
- Heat a griddle pan or grill until smoking hot. Cook the chicken strips for 3-4 minutes per side until charred and cooked through.
- Warm the pittas.
- Spread each pitta with garlic sauce. Pile the chicken, pickles, cucumber and tomato inside.
- Roll up tightly. Serve with chips if you like.
