Spit-roasted chicken shawarma wrapped in warm pitta with garlic sauce, pickles and chips. The Middle Eastern street food classic.

Ingredients

For the chicken

  • 600 g chicken thighs, boneless, cut into strips
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • 4 garlic cloves, crushed
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp ground paprika
  • ½ tsp ground turmeric
  • ½ tsp ground cinnamon
  • 1 tsp salt

To serve

  • 4 pitta breads
  • Garlic sauce (4 tbsp mayo + 2 crushed garlic + 1 tsp lemon)
  • Pickled chillies, sliced cucumber, tomato
  • Chips (optional)

Method

  1. Mix the chicken with all the marinade ingredients. Cover, rest at least 2 hours (overnight is better).
  2. Heat a griddle pan or grill until smoking hot. Cook the chicken strips for 3-4 minutes per side until charred and cooked through.
  3. Warm the pittas.
  4. Spread each pitta with garlic sauce. Pile the chicken, pickles, cucumber and tomato inside.
  5. Roll up tightly. Serve with chips if you like.
