Manakish — Lebanese za'atar flatbread

Ingredients
For the dough
- 250 g strong bread flour
- 1 tsp instant yeast
- 1 tsp sugar
- 1 tsp salt
- 150 ml warm water
- 2 tbsp olive oil
For the topping
- 4 tbsp za’atar
- 4 tbsp olive oil
Method
- Mix flour, yeast, sugar and salt in a bowl. Add water and olive oil. Mix to a soft dough.
- Knead 8-10 minutes until smooth. Cover, rise 1 hour until doubled.
- Mix za’atar with olive oil to a loose paste.
- Divide dough into 4 balls. Roll each into a 15 cm round, ~5 mm thick.
- Spread 1 tbsp of the za’atar paste over each round, going almost to the edges.
- Bake at 220°C for 6-8 minutes until puffed and golden at the edges.
- Serve immediately, ideally wrapped in a tea towel to keep soft.
Tip: No za’atar? Mix 2 tbsp dried thyme + 1 tbsp toasted sesame seeds + 1 tbsp sumac + 1 tsp salt.
