Sausage Bap

A soft bap filled with a hot sausage, topped with brown sauce and crispy onions.

Ingredients

  • 1 soft white bap or burger bun
  • 1 pork sausage
  • 2 tbsp brown sauce
  • 1 small onion, finely sliced
  • 1 tsp mustard
  • Salt and black pepper

Method

  1. Heat the grill to high.

  2. Grill the sausage for 8 to 10 minutes, turning, until it is browned and cooked through. Keep it turning so it colours evenly rather than splitting.

  3. Meanwhile, fry the sliced onion in a dry pan over medium heat for 6 to 8 minutes until golden and crisp at the edges.

  4. Split the bap open and toast the cut sides for 1 to 2 minutes under the grill.

  5. Mix the brown sauce with the mustard.

  6. Put the sausage in the bap and spoon over the brown sauce.

  7. Scatter the crispy onions over the top and serve immediately.

Notes

Crispy fried onions are what turn a sausage bap from adequate to worth the queue. Fry them separately, not alongside the sausage.
