Apple turnover (Greggs-style)

Greggs' flaky puff pastry triangle filled with spiced apple compote. The classic bakery pastry.

Ingredients

  • 1 sheet ready-rolled puff pastry (320 g)
  • 1 egg, beaten
  • Demerara sugar, for sprinkling

For the filling

  • 3 medium Bramley apples, peeled, cored, diced
  • 50 g caster sugar
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 1 tbsp plain flour
  • Juice of ½ lemon
  • 30 g butter

Method

  1. Melt butter in a pan. Add apples, sugar, cinnamon, nutmeg, lemon juice. Cook 5 minutes until softened.
  2. Stir in flour. Cool completely.
  3. Roll pastry into a 25 × 30 cm rectangle. Cut into 6 squares.
  4. Spoon apple filling onto one half of each square. Brush edges with egg.
  5. Fold over into triangles, seal with a fork. Brush with egg, sprinkle with demerara.
  6. Bake at 200°C for 20-25 minutes until deeply golden.
  7. Cool 5 minutes, dust with icing sugar if you like.
