Tomato, cucumber, red onion, olives, a slab of feta on top, dressed with oil and oregano. The Greek village salad — no lettuce, ever.

Ingredients
- 4 ripe tomatoes, cut into chunks
- 1 cucumber, sliced thickly
- ½ red onion, thinly sliced
- 100 g kalamata olives
- 200 g block of feta, drained
- 1 tsp dried oregano (Greek if possible)
- 4 tbsp extra-virgin olive oil
- 1 tbsp red wine vinegar
- Salt and pepper
Method
- Tip the tomatoes, cucumber and red onion into a wide bowl.
- Scatter the olives over the top.
- Lay the slab of feta in the middle.
- Drizzle with olive oil and vinegar. Sprinkle with oregano, salt and pepper.
- Serve immediately with crusty bread.
Tip: The slab-of-feta-on-top thing isn’t decoration — it lets people portion out cheese with each serving. Don’t crumble it.
