Tomato, cucumber, red onion, olives, a slab of feta on top, dressed with oil and oregano. The Greek village salad — no lettuce, ever.

Ingredients

  • 4 ripe tomatoes, cut into chunks
  • 1 cucumber, sliced thickly
  • ½ red onion, thinly sliced
  • 100 g kalamata olives
  • 200 g block of feta, drained
  • 1 tsp dried oregano (Greek if possible)
  • 4 tbsp extra-virgin olive oil
  • 1 tbsp red wine vinegar
  • Salt and pepper

Method

  1. Tip the tomatoes, cucumber and red onion into a wide bowl.
  2. Scatter the olives over the top.
  3. Lay the slab of feta in the middle.
  4. Drizzle with olive oil and vinegar. Sprinkle with oregano, salt and pepper.
  5. Serve immediately with crusty bread.

Tip: The slab-of-feta-on-top thing isn’t decoration — it lets people portion out cheese with each serving. Don’t crumble it.
