King Fries-style loaded fries

Ingredients

Chips

  • 600 g Maris Piper potatoes, peeled and cut into 1cm batons
  • 2 tbsp sunflower oil
  • Salt

Cheese sauce

  • 25 g unsalted butter
  • 25 g plain flour
  • 300 ml whole milk
  • 150 g mature cheddar, grated
  • 1 tsp dijon mustard
  • Pinch of salt and black pepper

Doner meat topping

  • 300 g minced lamb
  • 1 small onion, very finely grated
  • 1 garlic clove, crushed
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp ground coriander
  • ½ tsp salt

Garlic yoghurt drizzle

  • 100 g Greek yoghurt
  • 2 garlic cloves, crushed
  • 1 tsp lemon juice
  • Pinch of salt

To finish

  • 2 tbsp pickled jalapeños, sliced
  • Small handful fresh parsley, chopped
  • Pinch of sumac

Method

  1. Bake the meat. Mix lamb, grated onion, garlic and spices. Knead 3 minutes. Press into a small loaf tin. Bake at 180°C fan for 25 minutes until cooked through. Cool, then crumble into rough chunks.
  2. Bake the chips. Toss potato batons with oil and salt. Bake on a tray at 200°C fan for 30–35 minutes until golden, flipping halfway.
  3. Cheese sauce. Melt butter in a saucepan, whisk in flour and cook 1 minute. Gradually whisk in milk until smooth. Simmer 2–3 minutes until thickened. Off heat, stir in cheddar, mustard, salt and pepper.
  4. Garlic yoghurt. Whisk all ingredients together. Rest 10 minutes.
  5. Toast the meat. Pan-fry the crumbled doner meat in a hot dry pan for 3–4 minutes until crisp at the edges.
  6. Assemble. Pile hot chips onto a serving plate or into a paper boat. Pour cheese sauce generously over the top. Scatter the crispy doner meat across. Drizzle garlic yoghurt in zig-zags. Finish with jalapeños, parsley and a pinch of sumac.
  7. Serve immediately — cheese sauce goes rubbery once it cools.

Tips

  • The meat can be made 2 days ahead and stored in the fridge. Cold meat crumbles better than warm.
  • For extra-cheesy vibes, scatter a handful of grated mozzarella on top of the cheese sauce and flash under the grill for 30 seconds.
  • Use real Maris Piper potatoes — they crisp up far better than floury varieties like King Edward.
