Mozzarella sticks-style crispy fried cheese with marinara dip
Crispy golden breadcrumbs giving way to molten mozzarella in the middle — served hot with a quick marinara for dipping. The 4pm snack that ruins your dinner.
Ingredients
- 400 g block mozzarella (low-moisture if you can find it — regular will leak more)
- 100 g plain flour
- 2 large eggs, beaten
- 150 g panko breadcrumbs
- 50 g plain breadcrumbs
- 1 tsp dried oregano
- 1 tsp garlic powder
- 1/2 tsp salt
- Vegetable oil for frying (about 1 litre)
- For the marinara: 1 tin (400 g) chopped tomatoes, 1 garlic clove, 1 tsp dried oregano, salt, pinch of sugar

Cut the cheese into sticks about 2 cm wide and 8 cm long. Pat them completely dry with kitchen paper , any surface moisture causes blowouts in the oil.

Freeze the sticks for 20 minutes. This is the single most important step. Cold cheese melts more slowly in the oil, giving the crumbs time to crisp before the cheese escapes.

Set up the breading station. Three shallow bowls: flour in the first, beaten egg in the second, mixed panko + plain crumbs + oregano + garlic + salt in the third.

Bread each stick. Flour (shake off excess), egg (let drip), crumbs (press firmly so they stick). Repeat the egg + crumb steps for a double coat , it’s worth it.

Heat the oil to 180°C in a deep pan or wok. Use a thermometer , too cool and the sticks absorb oil, too hot and they burn before the cheese melts.

Fry in small batches for 2-3 minutes, turning once, until deep golden all over. Don’t crowd the pan , the temperature will drop.

Quick marinara. While the sticks fry, simmer the tomatoes with crushed garlic, oregano and a pinch of sugar for 5 minutes. Season and blitz smooth if you like.

Drain on kitchen paper. Serve immediately with the warm marinara , molten cheese waits for no one.
Notes
Double-breading is non-negotiable for that ‘no cheese leak’ guarantee. The freezing step plus the double coat is what separates restaurant-quality sticks from sad cheese-water balloons.
