Two flame-grilled beef burgers with extra melted American cheese, fresh tomato, crisp lettuce, sliced onion, pickles, and ketchup on a toasted sesame seed crown bun.

Ingredients

burgers (2 per burger)

  • 700 g beef mince (20% fat)
  • 1 tsp salt
  • ½ tsp black pepper

To assemble

  • 4 sesame seed crown buns
  • 4 tbsp ketchup
  • 8 slices American cheese
  • 1 tomato, sliced
  • ½ iceberg lettuce, shredded
  • 1 red onion, sliced thin
  • 12 dill pickle slices
  • 1 tbsp vegetable oil (for the grill)

Method

  1. burgers. Divide beef into 8 loose balls (2 per burger). press gently into large discs. Season both sides with salt and pepper.
  2. Grill. Heat a cast-iron griddle until smoking hot. Add oil. Lay burgers away from you. Don’t move for 90 seconds — you want a deep char.
  3. Flip + cheese. Flip, immediately lay a slice of cheese on each burger. Cook 60 seconds more for medium.
  4. Toast buns. Toast in a dry pan until golden.
  5. Assemble. bottom bun → ketchup → burger with cheese → onion → pickle → tomato → lettuce → burger with cheese → top bun.

Tips

  • Two burgers, not one thick one. Different searing, different texture.
  • Cheese on each burger means every pite has cheese — not just the bottom.
  • The flame char is the whole game. Mediocre at room temp, excellent off the griddle.
