Two flame-grilled beef burgers with four slices of American cheese, smoky streaky bacon, fresh tomato, lettuce, and creamy burger sauce on a large toasted sesame seed crown bun.

Ingredients
burgers (2 per burger)
- 800 g beef mince (20% fat)
- 1 tsp salt
- ½ tsp black pepper
bacon
- 8 slices streaky bacon
burger sauce
- 4 tbsp mayonnaise
- 2 tbsp ketchup
- 1 tbsp American mustard
- 1 tsp white wine vinegar
- ½ tsp garlic powder
To assemble
- 4 LARGE sesame seed buns (Whopper XL size, not regular)
- 8 slices American cheese
- 1 tomato, sliced
- ½ iceberg lettuce, shredded
- 1 tbsp vegetable oil
Method
- Sauce. Whisk all sauce ingredients together. Rest in the fridge.
- bacon. pan-fry bacon until crisp. Reserve 1 tbsp of the rendered fat.
- burgers. Divide beef into 8 loose balls. press into large discs. Season both sides.
- Grill. Heat a griddle with the reserved bacon fat. Lay burgers away from you. Don’t move for 90 seconds.
- Flip + cheese. Flip, immediately lay a slice of cheese on each burger. Cook 60 seconds more.
- Toast buns. Toast in a dry pan until golden.
- Assemble. bottom bun → sauce → burger (cheese up) → bacon → burger (cheese up) → tomato → lettuce → top bun.
Tips
- The XL needs the XL bun. Regular Whopper buns are too small — the burgers overhang.
- Render bacon fat first, then cook the burgers in it. bacon-flavoured beef.
- Four slices of cheese sounds excessive. It isn’t.
