Chakalaka (South African vegetable relish)

A vibrant, spicy tomato-based vegetable relish with beans and peppers. South Africa's favourite braai side dish — equally good cold the next day.

Ingredients

  • 2 tbsp vegetable oil
  • 1 large onion, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 3 garlic cloves, crushed
  • 1 tbsp grated ginger
  • 2 tbsp mild curry powder
  • 1 tsp ground paprika
  • 1 tin (400 g) chopped tomatoes
  • 1 tin (400 g) baked beans in tomato sauce
  • 2 carrots, peeled and grated
  • ½ small white cabbage, shredded
  • 1 bay leaf
  • Salt and pepper
  • Fresh parsley, chopped

Method

  1. Heat oil in a large pan. Soften onion for 5 minutes.
  2. Add both peppers, garlic, ginger, curry powder, paprika. Cook 3 minutes.
  3. Tip in the tomatoes, baked beans, carrots, cabbage and bay leaf.
  4. Simmer uncovered for 15-20 minutes until thick and jammy.
  5. Season. Stir in parsley.
  6. Serve warm or cold with grilled meat, bread, or rice.
