Fakeaway recipes in Arden (Glasgow)

North Glasgow chippy culture — late-night pakora, fish suppers, haggis suppers.

Arden covers the area around the old Haghill shopping centre in north Glasgow — a residential district that has the strong working-class Glaswegian food culture in spades. The chippy is king here. There are takeaways on every main road and several side streets, all open late, all serving the Glasgow canon.

The Arden chippy serves the same dishes as every Glasgow chippy: fish suppers (battered cod or haddock with chips, bread and butter, a cup of tea), haggis suppers (deep-fried haggis with chips and curry sauce), munchie boxes (a sealed styrofoam container of pakora, donner meat, chips, cheese and sauce), Glasgow pakoras (chicken pakora with chili sauce), and pizza chips (chips topped with cheese, doner and curry sauce).

The chippy is also where late-night Glaswegians end up after a night out — most clubs in Glasgow city centre are within walking distance of half a dozen chippies, and the post-pub crowd knows which ones stay open latest.

For curry, the area around the old Forge Retail Park has a few strong options — mostly Punjabi style, with rich masala and karahi. Reproduce at home: chip-shop curry is surprisingly easy (a tin of chopped tomatoes, curry powder, a splash of malt vinegar, sugar to taste). Glasgow pakoras are just chicken pieces in spiced batter, deep-fried. Both are in the canon.
